Raw Vegan Ceviche

This Raw Vegan Ceviche is absolutely stunning. It’s very easy to prepare and incredibly refreshing. Make sure all the ingredients were in the fridge before as it will add a crunchy touch to it.

What’s in it?

  • 1 large bunch celery
  • 2 large green apple
  • 1 large fennel bulb
  • 2 limes

Instructions:

  1. Slice and chop all ingredients into small squares and add them into a large salad bowl.
  2. Squeeze fresh lime juice over ingredients in bowl.
  3. Mix well.

  1. Fennel and lime is an amazing combination. That chilled crunch works too. I moved into a vegan diet gradually and find that it reduces craving and improves my palate. My favorite slogan remains:
