Raw Superfood: Spicy Lime Energy Balls

We absolutely love how fresh these Spicy Lime Energy treats taste. They are full of goodness. We usually stack a dozen of them in the fridge/freezer and use them as an afternoon snack or a post-workout treat to replenish the body with good nutrients soon after the gym or run. They are also great road-trip, hiking or trail running snacks. Look for organic and raw varieties of each ingredient. This snack is super easy to make and takes about 10 min. Store them in a zip lock bag in the freezer and enjoy one or two as an on the go snack when you are in need of an energy boost.

What’s in it?

  • 1 cup pitted Dates
  • 1/2 cup Raisins
  • 1.5 fresh squeezed Limes
  • 1/2 cup Almonds
  • 1/2 cup Cashews
  • 1/2 cup Walnuts
  • 1 small piece of Ginger
  • 1/4 tbsp Cayenne Pepper Powder

Instructions:

  1. Throw the dry ingredients in your food processor, then add the dates and raisins and lime juice and process until everything starts to stick together. If too dry, add more lime juice. Note: One word of caution regarding the pitted dates. It can be difficult for some food processors to handle dates as they are pretty big and sticky. What I usually do is cut them into fairly small pieces beforehand and only then add them to the rest of the ingredients in the food processor.
  2. Roll into balls. Place balls onto either parchment paper and place into freezer. Wait 60 min before eating.
